Healthy Strawberry Pie
Ingredients
- 2 eggs 
- 2 cups whole wheat flour 
- juice of 1/2 lemon 
- zest of 1/2 lemon 
- 2 tablespoons of sugar 
- 1 packet of vanilla 
- 1 packet of baking powder 
- 1/2 cup of milk 
- 1 cup of milk (for the cream) 
- 2 tablespoons of starch (for the cream) 
- 1/2 mastic (for cream) 
- 1 pack vanilla (for cream) 
- 2 tablespoons coconut powder (optional) 
- 10 strawberries 
Instructions
While preparing the cake, we whisk 2 eggs and 2 tablespoons of sugar until it becomes creamy, then 1/2 cup of milk, 2 cups of whole wheat flour, 1 packet of vanilla and baking powder, juice of half a lemon, zest of half a lemon and optional 2 Add a tablespoon of coconut powder and whisk again. The consistency will be a little more liquid than regular cakes.
Grease a medium-sized cake mold with 1-2 tablespoons of olive oil and pour the cake batter. We bake our cake in a preheated oven at 150 degrees for 25-30 minutes.
Let's prepare the cream while the cake is baking. Add 1 glass of milk, 2 tablespoons of starch and 1/2 drop of gum to the pot and cook, stirring constantly, until it thickens. After closing the bottom, we add 1 packet of vanilla.
