Mutancana
Ingredients
1 kg lamb (large cubed)
2 spoonful butter
1/2 teaspoon of Olive Oil
20-25 shallot onions

1 tea glass of raw almonds (we boil them in hot water beforehand and peel them)
5 dried figs
5 dried apricots (I preferred sun dried)
5 prunes
2 tablespoons Raisins (preferably black seed raisins)
2 teaspoons Sumac
Salt, Black Pepper
3 cups of hot water
Instructions
Put the butter and olive oil in the pan. We add the meat. Cook on medium heat on low heat until the meat absorbs its juices. Throw in the shallots and garlic and fry for 10-15 minutes.
We add hot water, close the lid and cook for 30 minutes. Finally, we add peeled almonds, dried fruits cut in half (you can throw the grapes whole), salt, pepper, sumac and close the lid of the pot.
We cook the meat until it is tender. After this stage, it reaches the consistency we want in approximately 1-1.5 hours. Sweet and sour makes a great meat dish. Mutancana recipe is ready. Enjoy your meal.
